Easy Quesadillas

Chicken breast cooked in EVOO (we use Grapeseed Oil)
* if everyone likes “spicy” food – use cayenne pepper and chili powder – I usually season each quesadilla individually !
Sautee Veggies (I like green peppers, onions, and mushrooms) I also pour some liquid from a can of Ro Tel to cook veggies in.
Fold each flour tortilla for a nice visual line and then add veggies, chopped (cooked) chicken and shredded cheese
Broil until lightly brown and cheese is melted
top with sliced avocado
serve w/ chips & salsa
(we cut out the sour cream)
